After devatting, the wine completes its alcoholic fermentation in a steel tank before malolactic fermentation begins, Clà is put on the market approximately one year after harvest, During the first week, the must is pumped over twice a day, Racked twice over a period of about two weeks it is then bottled without filtration, Suitable for vegetarians, The grapes are harvested by hand, then pressed without added sulphites and left to ferment with wild yeasts at a temperature not exceeding 28°C, The wine is then racked into oak barrels where it rests for about a year.
